Alora men je mi reka nu votu jena teknik, je reka: «Ti, ka greš bra masline,

What did these our forebears do before?
They picked the olives and brought them home.
They laid… they had nothing to lay them on, they actually laid them in the kitchen, there, where they lived.
They threw the olives on to the floor there,
all those they produced, it took fifteen, twenty days, something like that,
the water began to drain down,
the water dripped out, which […]
it ran around the house.
Then, afterwards, when the time came, you had to go to the oil presses,
and you had to book before bringing these (olives).
We filled sacks with these olives and carried them to the oil press, there they stayed for another one week, two weeks.
Thus the oil produced was not nice, this oil, it was very yellow, thick, it was not very nice.
Whereas now there are oil presses that can press more olives in a day.
Preferably within 24 hours, 48 hours you have to make (=process) the olives.
When this olive (=these olives)… gets a bit warm (=ferments),
where it stands, it ferments, because it easily ferments.
When it has fermented, then it happens…
you take it to the oil press, it cools off.
Then it stays there for a further three, four, five days: and what is produced then is not a nice… not a very nice oil.
Did you understand, what it is like?
So it would have to be (done like this):
[…] within 48 hours, if possible,
you should make (=process) the oil,
you must not make it all at once.
So an expert once told me, he said: “When you go olive picking,
there are the black and the white.
First harvest the black, all the black,
because the white may still stay”.
When the time comes that you are finished with harvesting the black, then you have to go and harvest the white, too.
cominciava a uscire l’acqua sotto,
Tu cogli *prima* quelle nere, *tutte* quelle nere,
Was machten diese unsere Alten früher?
